and changing our world in subtle and profound ways. Our food choices are
no longer geared towards physical health. Instead, deciding what we put
on our tables and in our mouths has become a political, environmental,
social and spiritual choice.

every ingredient, every method and every piece of equipment is chosen to
produce the finest quality. Many things are done by hand, though they
could easily be automated, or are fussed over, when they could be done
faster. It is less efficient, it is more expensive and it simply
produces better quality food. We believe strongly in giving people
alternatives to the homogenized, mass produced foods that have no soul. |
